You can adjust the PHP version for a website in Plesk via your accounts control panel

Select Websites & Domains from the left panel
Click on Hosting Settings under the domain name in question
Under the PHP Support section, you can select the PHP version from the drop-down
Hit OK or Apply to save your changes
